So the dinner went great! Yay! Even my Father in Law, who isn't the greatest person to have try new things liked it!
I got the idea from SkinnyTaste here Chicken Pot Pie Soup. I have always wanted to make Chicken Pot Pie but never got around to it.
Plus since my oven is broken...well there isn't much chance of me making it until it is fixed or we get a new one.
So I was so excited to see this recipe! It was exactly what I wanted for the Fall!
And really it only took about 45 minutes to cook. I didn't use the frozen veggies that SkinnyTaste has on hers. Also I did put a little more water, which did require more Chicken Bouillions but I wanted more slurp!
Other then those small changes I used the same thing SkinnyTaste did. Plus the best thing about this is...for 1 cup its only 169.2 calories!
Yummy and Healthy!
Of course I am having some of the left overs for lunch today!

Day 45: Family Approved Meal + New Book
Hey NeverEver's!
So I am feeling TONS better then I did for the last few days! I really hate being sick but I am hoping that since I got sick early in the season that I might not get sick when everyone else is sick. Not sure if that would work or not.
Anyways, I decided that I wanted to cook. As you all know, or will know after this, I am not much of a chef. In fact I try to avoid cooking as much as possible...the kitchen seemed like a really scary place.
But I have taken things slow and steady...and they seem to be working out really well. Here was my experiment for today!
I got some farmer johns chicken patties from Target, they were having a sale, and some of the Archer Farm pasta choices. The one here is Lemon Caper Pasta. It was a little salty for me but otherwise very good.
The chicken was breaded in Fresh and Easy Italian Bread Mix and used egg whites to help coat it on. I don't use anything else other then EVOO Non-Stick Spray.
Tell the truth I am not sure what else to use as I really don't want to just pour the oil onto the pan. Any options I would LOVE to hear about it!
I did get a go ahead from the Hubby and his family to keep this idea in the mix of cooking recipes that I want to keep cooking. So that is a BIG plus for me!
Did go out walking today! Almost didn't, I was distracted by reading one of the newest books in a series I love!
Nalini is a wonderful author who is just amazing bring her characters to life. What is really special is that even though each book is a new character's relationship, you still see what is going on with the original ones you fell in love with! Oh and did I mention her books are full of vampires and angels?
So after I forced myself to put away my nook, yes it was a struggle, I went for my walk! It was just a wonderful night. Nice weather perfect for an evening walk.
Anyways, here is my Daily Stats for Day 45:
I am pretty happy with today. I went a little over board with the snacking but still was under my calorie limit. What I mean by 'going overboard' was that I had a snack when I wasn't really hungry. I know better then that.
So NeverEver's, what do you use to cook with in a pan? A non-stick spray? Oil? Butter?

Friday: Meal at Home
Hey NeverEver's!
So I decided that I wanted to cook today, I haven't really cooked in a while. Or at least tried something new. So the genius I am decided to cook something with the oven...on a day that the outside heat was around 98+. I can say this for myself...I didn't give up!
As I was explaining in my last Daily Post Day 24 today the Hubby and I are going to a concert at the Hollywood Bowl to see Juanes! Well they allow you to bring your own food and drinks so I wanted, since we have to get there early to avoid traffic, to cook! Here is what I came up with;

Here is the Recipe Chicken Rollatini With Spinach
This was the first time I went to Fresh and Easy. I have to say I liked it and it wasn't bad pricing for the meal.
So like I said its really hot outside...and whats worse the oven's door is broken...so unless I really want some burn marks I couldn't use it. Happily we have a toaster oven that worked perfectly!
And here its all cooked. My cheese didn't melt that right but I got the right cheese just not the right style 0_o. But it tastes yummy so thats all that counts!
I got this idea from SkinnyTaste as well. Here is the link, PeanutButter + Jelly + Greek Yogurt! It is super yummy but I used FAGE Yogurt as that is my chosen Greek Yogurt and Raspberry Jelly for a little more tartness!
So I am pretty happy with my first attempt in a LONG while at cooking. I can't believe this only took about 35 minutes to prep and cook!
