Sunday Fun Day: Cooking Galore!

Hey NeverEver's!

Happy Sunday Fun Day!!! I hope you have all had an amazing weekend!

Its been a quite weekend for the Hubby and I, or at least yesterday was. It was rainy and cold and just lovely!

Don't those clouds look lovely!

Personally, I love it when its cold outside. Not only can I actually dress to the weather, unlike Summer where there is only so much you can take off (thank goodness).

Its perfect for snuggling up in a comfy blanket, or a newly given purple robe (thanks again in-laws), and reading some books! Speaking about reading, I went on a small buying spree on B&N for my Nook. It seemed to be a biography / history books this week. I am looking forward to this book the most!

It is the book about Hatshepsut, who was Egypt's first female pharaoh. I have always been extremely interested in Egypt and its history. Can't wait to see how the book is!

So, as it was a cold day Hubby and I decided to head to Fresh & Easy and get some supplies for the cold weather.

My soup of the day was from SkinnyTaste, she has amazing recipes, and I chose the Beef, Potato & Quinoa Soup. Never had Quinoa before, but I hear lots of good things about it.

Quinoa has High Protein, has all 9 essential amino acids and it is gluten free. So it was on my list of things to try and I was finally able to do so!

As you can see we also picked up some beer. Fresh & Easy has some brands that we never seen before and I was in an experimenting mood! So they were impossible to pass up.

My beer of choice was the Bohemia. It is a Mexican beer that was smooth going down and had a pleasant aftertaste. Not what I usually go for, Bluemoon / ShockTop, but it was an easy going beer that is perfect for that mood of 'I want a beer but nothing heavy'.

Hubby's beer of choice was called BumbleBee 'Golden Ale'. BumbleBee did have MANY other tastes but Hubby choose the 'Golden Ale'. Now this one for me was the type of beer I go for! It was powerful going down and had a delicious hop aftertaste!

For me beer is like wine to some people. There is always a beer that will go good with what you are cooking. And each one has a unique flavor and taste! So good, of course in moderation!

On to the soup! It was delicious! Only 309 calories and it is super filling! The beef was so tender and with the scallions, thank you again Hubby for getting that after I forgot, gave it the South American feel to it just like it was supposed to!

Now the quinoa wasn't really that noticeable. Not to say it was bad but I would consider it more of a 'filler' then anything else. At least in this soup!

Okay on to Sunday Morning! I was planning this since Saturday night and it came out delicious!

Steak and Egg's for Breakfast! Now I never made this before, but I knew it wasn't hard. I used lean steak with California golden potatoes instead of hash browns. Personally, I thought they were better and healthier plus easier to make then hash browns.

Now these eggs are what I am the HAPPIEST about. I have NEVER EVER done sunnyside up eggs. Somehow they always turned into scrambled! So the fact that I have proof, and it was delicious, that it has been done has made my day!

So the breakfast was a hit with the hubby! It was a little more filling then I thought it would be so this great breakfast will be keeping us full for most of the day!

Okay so it is Sunday Football. I am gonna start watching that now.

I would love to see another victory for my Saints!

Hey NeverEver's, have you ever made something in the kitchen that you thought you couldn't? What is your favorite breakfast to have?

Birthday Weekend Continues

Hey NeverEver's

Okay first this has been an amazing Friday & Saturday. Since Sunday is just starting for me I am thinking it shall be amazing too!!

On Friday I got to see the Space Shuttle Endeavor! We didn't make it back out there in the morning so until we go see the exhibit at the California Science Museum.

Did I mention that this whole weekend is my Birthday Celebration?

No?

Okay well I am treating this weekend as such. One day isn't enough for me anymore ^_^.

So on Saturday I got to hang with one of my oldest friend for breakfast, UFC Fight Night for dinner (and I got to meet a MMA Fighter), and re-catch up with an old friend for a night cap party!

So best friend took me to a place called Fred 62! I had never been there but it was a pretty awesome vibe. A diner look inside and outside is a posh-ish outdoor seating. We took the outside.

Of course we had to pose for a photo! I wouldn't have had it any other way. I thought it was gonna be hotter so I brought out my sweater dresses...well it got warm. California weather for you.

So this was breakfast. I got the 'Love Letters' which was french toast with apple and peach puree and topped with raisins. It was the perfect breakfast to start off the day.

After this we headed over to the Culver Westfield Mall. Where I got the perfect Birthday Dress and Belt!

It is the perfect little black, slightly edgy, dress. I actually have never had one before so this is an even more important LBD!

Sadly, I don't have the photos for the UFC Fight Night because they are on my phone and I am having troubles retrieving them. I don't have a smart phone so that might have something to do with it...

Anyways, hopefully by the end of the night I should have them transferred and I can show you all in the best post!

So on to the final event of the night. The night cap party with an old friend who we are just getting back together again.

We both have birthdays in October. Her's is the 16th and mine is the 15th which was one thing we loved about each other!

Beer Pong is a lot harder then I originally thought it would be...happily we were able to drink water and not something else every time we missed a cup ^_^.

So that was my Saturday! I did love it and I hope yours was just as good! Here are the Daily Stats!

Daily Stat Day 79:

It was all that walking to the Space Shuttle! Well worth it!!!

Daily Stats Day 80:

Since I consider Saturday my Birthday Party with friends and Birthday Calories don't count I am not showing them!

However, you will get a full report from today's consumption I promise!

Okay NeverEver's, enjoy your Sunday Football. Lets go Packer's for the Hubby! And of course the rest of your day!

P.S. I might be coming home with a new car, my pretty Lancer has had a good life. So I will update you all on that!!

Sunday Funday! Weekend Updates + Schedule

Hey NeverEver's!

It is so hard to get back into the swing of things, especially when it means waking up and having someone else schedule. But that is what a job is, even a 2 week assignment.

So today's post is mainly to update my Daily Body Media Stats. Also to go over what I am planning to do this week.

Daily Stats Day 58:

Daily Stats Day 59:

Those Carl Jr's Chocolate Chip Cookie was calling my name...and I paid for it.

Daily Stats Day 60:

Now Saturday's Calorie Intake was something I planned on. Hubby and I went out to see the UFC Fight #152. It has been over a month since the last time we watched one, I was really missing it to tell the truth!
It was an amazing card! So much action, even on the pre-lims on fox. Plus it was a lot of fun running into the normal Applebee's crowd for the fight! So although I ate more then my calorie intake it wasn't as bad as previous fight nights!

So as yesterday's entertainment, the UFC #152, was amazing today's NFL Game for my Saints was anything but.

We had an amazing first half, but the Chiefs came back from Half Time on fire! We even went into Over Time...and it still wasn't enough.

So over the next 7 days I do have a plan...hopefully this time it will become true!

WorkOut Schedule!

Monday: Weigh In + Spin, seriously it has been to long

Tuesday: Body Pump at the Gym

Wednesday: H.I.I.T, I have actually missed this

Thursday: Walk, maybe some jogging

Friday: Day of Rest

Saturday: Hiking in the Padres Mountains here in Cali

Sunday: Day of Rest

Other Highlights:

I am also getting together with a friend photographer who is going to show me how best to use my Nikon CoolPix L130, so soon you guys are going to be getting better pictures!

Also, going to start tinkering with my blog. Possibly getting a new layout or at least changing things around. You guys have to tell me what you are thinking about it! Please!

Okay NeverEver's, enjoy the rest of your Sunday! See you all on Monday

Weekend Review Day's 53 & 54

Hey NeverEver's!

How was your weekend? Mine has gone by pretty fast. Of course I think that has to do with the fact I spent all of yesterday in a movie theater!

Since the Hubby and I were going to spending hours in that theater, for a worthy cause of course, entertainment! We had to start the day off right!

Cantaloupe with grapes and a light drizzle of honey! It was just the right kind of sweet. Hubby wasn't to sure about it at first, he never had cantaloupe like this before, but after trying it out he admitted he liked it! Score!!

We got a picture of the first artifact that Indiana 're-locates' in Raiders of the Lost Ark. Have to say the movies were wonderfully remastered!

We did have a small issue with a fire alarm going off, at first we all thought the flashing lights was something to do with the movie, oops. After things settled down we found out that someone pulled the fire switch while leaning against it. Every movie goer got a free ticket back for the whole 'disturbance of the movie'. I personally was just happy that it wasn't an actual fire!

A really nice touch with AMC was that they placed the times the movies were going to be starting, so we all had time to move around after each movie without worrying about missing the next one! It was really well put together and well worth the $25 for the ticket.

After the movies, we got out pretty late, Hubby and I decided to try a new place by the theater. i-sweet has only been open for 4 months but the place was packed.

I ordered the green tea & milk shaved ice cream with mochi pieces. It was delicious! The green tea didn't have any unnatural sweetness so it was still tart. The thing was huge though so the Hubby and I shared! There was some left overs, like I said it was a lot of shaved ice cream, so I know what I will be having for the next few days ^_^!

Daily Stats Day 52:

Friday after going shopping for new Blog Plates over at Target I start craving pizza. So for the 'treat' of the weekend was a little early and we went for some pizza hut. I think I did pretty well with that calorie balance!

Daily Stats Day 53:

For a day in the theater what saved me...Almonds! They filled me up so well that a lunch of a hotdog was just enough. Also I did sleep more then 3 hours but my arm started hurting, I slept on it, and I just had to take off the Body Media.

Second Week Game
So Sunday has been pretty good to me. Slept in, made breakfast, and just basically enjoying my game...even if we are losing!

I wasn't sure what I really wanted for breakfast today but as soon as I got to the kitchen I knew. I wanted pancakes again...but this time I wanted apples in them!

MultiGrain Apple and Cinnamon Stuffed Pancake
First I am happy how these babies turned out! So yummy with the apple and cinnamon! Have to say that I might like these ones better then the MultiGrain Peach and Cinnamon Stuffed Pancakes.

Secondly I love how this picture came out! The plate and the syrup under it! It looks awesome, or at least better then some of my other pictures!

So NeverEver's do you guys wake up on Sunday to watch your teams play? What is your favorite thing to make for weekend breakfast? I need some new ideas!

Have a great rest of your Sunday NeverEver's, see you all on Monday!

Sunday Plan Day + Daily Stats 46 - 48

Hey NeverEver's!

I do hope you all enjoyed your Sunday...and if you are a Football fan the first seasons games! Can't say the Hubby and I were very lucky in those games. We practically lost the same way and ALMOST the same score. Not a good day for us at all!

Speaking about not good days...I have to admit this weekend, from Friday to Sunday, hasn't been my best of days. I have been at home this whole weekend with the hubby just watching movies. Except for that small PS3 (playstation 3) scare we had...we didn't do anything. And my Daily Stats show it.

Friday Day 46 Stats:

Friday I caught up with a friend over at Red Robin. Stayed away from the burgers...but not the beer. I really need to watch those liquid calories. For dinner the hubby and I decided on Taco Bell. Have to say that I don't think I can handle it ever again. It didn't go well for me...so Taco Bell is now off the list of fast food places!

I know it should have been off a while ago, but when your trying to lose weight but the rest of the family isn't, as they don't need to, its hard to balance. That is why I usually allow weekends a free pass and don't worry about it. But my body is changing...and it doesn't like fast food anymore.

Saturday Day 47 Stats:

Saturday I felt that it wasn't to bad. We had a small issue with the PlayStation 3, which was fixed after spending $60.00 on it. Not as bad as sending it into Sony though and it seems to be working just like new again!

Hubby actually made lunch, a ham sandwich with egg. I forgot to take pictures so the results can't be seen, but let me tell you it was YUMMY!

As we had a late lunch Hubby and I decided to share some Panda Express. I think I can get used to the idea of sharing as we were full afterwards.

Sunday Day 48 Stats:

Sunday has to be my worst day since I started this blog. Never have I been in the 'surplus'! Sad thing is...the calories basically came from liquid calories. I really need to watch my beer intake, especially when I am out with a crowd.

So as this weekend I went over board with processed food, I am going shopping tomorrow and picking up as much fruits and veggies and unprocessed food that I can. The plan is to get the processed food out of my system.

Here is the Grocery List:

  • Lemons - This is for water flavor
  • Egg Whites
  • Lean White Meats
  • Greek Yogurt
  • Fruits
  • Green Tea - I think I might already have this...have to check
  • Vegtables
  • Nuts - I have almonds and peanuts so I am good to go!
Basically I am staying away from pasta and rice (that is going to be so hard), sugars and anything that comes in a box. Yup looking at boxes as the enemy right now!

Now please don't worry this is only for 3 days and only to clean out all my bad decisions from this weekend.

Also my Workout Schedule:

Monday: Spin Class

Tuesday: Body Pump

Wednesday: H.I.I.T

Thursday: Day Off

Friday: Gym Cardio

Saturday: Day Off

Sunday: Strength Train Gym

Okay NeverEver's I am getting ready to hit the sack early tonight! Have you planned out next week?

Sunday Fun Day + Day 34 + Cooking

Hey NeverEver's,

I am a weekend chef now! I think I got addicted to cooking healthy meals for the Hubby and I. Now I just have to get it out of the 'weekend' and into the week...although that may take some time!

So here is Breakfast!

All finished the MultiGrain w/ Flax Pancakes!
Here it is all done! 3 pancakes for both Juan and I. Have to note that this is the first time we ever had Multigrain pancakes. They tasted really yummy!

And here is the making of it
Weird thing with Multigrain pancakes is that there is supposed to still have lumps. I had to re-read the instructions to make sure I understood it. Did I mention that I used to burn pancakes...or not cook them all the way through. Yes I was a baaaaddddd pancake maker, but I have gotten better! Yay!!

So here was dinner!

Lemon Chicken w/ Buitoni Three Cheese Pasta
So I was feeling a little adventurous today...I also had to make do with some left overs. And the picture above is what came up!

Here is what I used and the stats:

Serving Size 1 * Calories 601 * Fat 12.1 * Protein 50 * Carbs 79.6 *

  • Chicken Breasts
  • Black Pepper - 2 Tbsp
  • Salt - 2 Tbsp
  • Lemon - 1
  • Egg Whites - 1
  • Water - 1/2 Cup
  • Buitoni Three Cheese Ravioli - 1 Cup
  • Pasta Sauce - 2 Tbsp
Breaded Chicken w/ Lemon Topping
Sprinkle the pepper and salt on each side of the chicken. In a bowl add the egg whites and 1/2 cup of water. In the other bowl put the bread crumbs. Dip each chicken in the egg whites then in the bread crumbs. Before placing in the pan to cook squeeze 1/2 of the lemon on the chicken.

Cooking the Chicken
Put the chicken in a pan and spray the pan and chicken with the Non Stick Spray, I use EVOO Non Stick Spray from Fresh and Easy. Make sure to cook the chicken all the way through. While cooking I add a few more drops of the lemon while the chicken is cooking.

I got the chicken idea from here. Although I didn't use the whole SkinnyTaste recipe it did give me the YUMMY idea! This was also Hubby approved!

So how was your weekend?
