The Breakfast Cupcake!

Hey NeverEver's!

Welcome to Wednesday. You have made it to the half way point, pat yourself on the back...and then shake it like you just don't care ^_^. Okay...I promise to not be weird anymore.

On SuperBowl Sunday I was in the mood to cook. Might have to do with the fact that I couldn't sleep the night before and stayed up looking at Pinterest or maybe it had to do with the fact that I had company coming over and wanted to put out the best food possible with my budget.

Either of those reasons would work, but I really didn't care I just wanted to cook. So I started with breakfast.


And breakfast was good. In fact it was delicious! even my picky Father in law liked it, which is saying something. It was also something I wanted to share with you. But there is something I need to share first:

I did get the idea of a pin on pinterest but the link was broken and I cannot seem to find the original by searching it. So I am fully stating right now that this idea is not an original of mine, I just can't find an un-broken link to link it up. If the creator does read this, or if you know of an un-broken link, I would be more then happy to link this to you! 


Now with that fully stated let me share with you how I cooked it. Above is how it looked like going into the oven and the first picture is how it looked like coming out ^_^.

Here is the recipe as I created it, but again the idea came from else where.



With this being the first recipe I have really ever shared with you all it has got me all tied up. On one hand I am proud and happy to be sharing with you something that I made! On the other hand...what if you guys hate it. -_- I am not a certified chef. I have been debating the idea of sharing it.

And I decided to share it. Just let me know if you guys do make it how it comes out ok!

Updates, Updates, Read All About Them

Hey NeverEver's,

Does it ever feel like there isn't enough time in a day? Yaa I have been feeling like that for this week. Was SUPER  sleepy yesterday and today I sleep past my 'Workout' alarm and right into the 'Get up or you'll be late for work' alarm. Which was almost slept through as well.

So I am really feeling the time crunch today. But, I am looking forward to posting this, I know silly things make me happy, plus I have my gym bag ready to go after work! 

My step to make sure I get there after work and not home...get dressed at work! That way your workout clothes vibe sinks in and you get there to the gym. At least it works for me!

Okay so here are the promised pictures! 


Sunday Night's Dinner which came from SkinnyTaste Chicken & Cavatelli Soup. I am not sure what 'Cavatelli' is, I do know that I just used a normal noodle for my soup. So I think it turned out more 'Chicken Noodle' then 'Chicken & Cavatelli' but it was delicious all the same! 

Next time I have to find this 'Cavatelli' and try it out with that!


On to Tuesday! Yes I know I am skipping Monday, but I don't have pictures for Monday. Anyways, I finally broke down and purchased the Starbucks VIA things. My verdict...I LOVE IT! Makes a delicious Very Berry Hibicus, without the long lines and the gas wasted. 

If you have a favorite Starbucks flavor that is available with the VIA...get it! 

Now what I am MOST happy with is that I have finally brought my own snacks. I was saying here, that I was snacking way to many things in the office. All very bad healthwise. So, there are my almonds!

Tuesday's Lunch! It is the same soup that I did for Sunday's night dinner. But, the noodles sucked up all the water. I actually had to add some more while warming it up! 

Now it was just as good the 2nd time as the 1st time. Thanks again SkinnyTaste!


Now last nights dinner was a little different. First I got it off of Eat Live Run. Which is an amazing blog who's author, Jenna just wrote a book called White Jacket Required. A GREAT book

So the chicken is called 30 Minute Lemon Brown Sugar Chicken! It is the first time I have ever cooked something off of Jenna's blog and it tasted great! I was thinking it would be a little sweeter then it was but it hit it right in the middle!

My stove is still down so I am using my little toaster oven. I can not wait to get my stove replaced. Should be happening soon!!


What chicken wouldn't be complete without some FIVE cheese tortellini! I should mention that this is also wheat pasta, which makes it even yummier in my book!



The finished product! As I said the chicken was yummy, zesty with lemon but sweet with the brown sugar! Something that I will be having or making again!

So I have some things happening here! Yay for things happening!!

I am going to Pamper Me Fabulous on November 11. I can not wait to share with you the fitness classes, the booths and samples that they are offering! More info about that coming soon!

I just got the tracking # for KLUTCHclub October Box! It should be here soon and all the goodies will be shared!

Also, I am doing a Guest Post for FitKit Community, which is something that NEEDS to be checked out!

Finally, (I know long list) I will be taking part of the Around The Plate November 10 Day Challenge. Which is (drum roll please)...10 whole days of eating at home.
No eating out at all. This includes, vending machines, work snacks, forgot lunches or anything else that doesn't come from home.

As I have been having an issue with too much eating out I am really looking forward to this challenge! It starts on November 5th! So come join me!

First Flue + the Quesaco


Hey NeverEver's!

So I got my first cold of the Fall season. I should mention that it was 96 degree's outside and I shouldn't be sick at all. 

I am feeling TON's better then I did yesterday afternoon. Left work early because I was not able to pay attention to my computer screen any more and that is how mistakes are made. Happily, the boss agreed with me. 

Basically just dosed up on Zinc and flu med's plus slept...or tried to sleep in the heat...the rest of the day!

I did have dinner last night and it was one of my FAVORITE Mother in Law dish of ALL TIME! May I present the...

'Quesaco' otherwise known as the Quesadilla Taco. But I like my name for it better!


Here it is just being all quesdilla like. Just cheese, home made tortilla and Canola Oil fried. 


And here is it being the 'Quesaco'! We open it up and stuff it with green or red chili (no thank you I'll pass), lettuce and sour cream. 

I am going to be working with my Mother in Law to not only give you the original recipe but to also make the 'Healthy' version of it. It is going to take some trial and error in the kitchen but hopefully I can make the 'Healthy Quesaco' just as yummy as the original one!

Seriously, I can't wait to try it and see what happens!

Cooking for the Whole Family Type of Monday

Hey NeverEver's!

First off I have GREAT news! I got the job at the Property Management Company! I start tomorrow at 8:30am and I am SO ready for this thing to start!

I have my outfit all ready in my head, straightened my hair and of course did my nails! I always feel better and more professional!


So thank you Essie and Wrapped in Rubies! I think its a perfect fall color with just enough 'red' to make it fierce!

Since it was my last 'non working day' I thought that I might cook for the WHOLE family. I seriously wanted something easy and that wasn't to expensive, hey those paychecks aren't coming just yet, and I found the perfect thing!

Three Cheese Tortellini and Mushroom Soup from SkinnyTaste and since I was making things for the family I decided on dessert from PeanutButter and Peppers which was the Apple Frozen Yogurt! You guys both have AMAZING recipes and it always taste delicious when I try them!

 

Me being all House Wifey and saute-ing the veggies for the soup! To tell the truth about a year ago I would have never stepped inside the kitchen, and here I am now actually cooking whole meals, planning ahead and people LIKING my cooking!


 There are those veggies I was talking about! Carrots, Celery, Onions and a little bit of garlic! Now I am not an onion fan but really by the time the soup was done...I didn't even taste them! I did forget to picture the mushrooms... oops! 


Here is the final product! Three Cheese Tortellini and Mushroom! The whole family gave me their thumbs up. Including my Father in Law that rarely ever eats anything that doesn't have meat in it even liked it! 

I shall call this a resounding success! 

Then of course there was dessert! I couldn't leave that out. Now to tell you the truth if I was freaking out about dinner...I was a nervous wreck for dessert, but it turned out really well! That is what I get for following directions ^_^


Seriously, I am not sure how Jen, PB and Peppers, made this taste so fall-ish! It was perfect greek yogurt tartness with the sweet cinnamon and apple that just takes you to leaves falling! 

Talking about the 'Fall' I finally got my table center piece just as I wanted it! You think with the Hubby being a Visual Manager that it would have been easier...


Also, I think this might have been the best photo I have EVER taken to date! But now the house is officially ready for Fall!

Daily Stats Day 74:

For a day at a Korean BBQ I am happy that I only went over 606. That is better then that last time I went there.

Gym, Dinner and Evening Walk

Hey NeverEver's!

I made it to the gym again this morning! Yup, second day of working out in the morning...which means I am waking up early in the morning! They say it takes 3 weeks to make something into a habit so lets see what happens the next three weeks.

Anyways, this will not be a super long post. I am way to distracted by the really nice walking weather outside. But, I have to let my food digest and I really wanted to show you my cooking tonight!

I call it...Turkeyburger Helper! Okay, its a horrible horrible name but I got the idea from hamburger helper as you will see ^_^.


I had some Turkey left over and I didn't want to make turkey meatballs so I decided to go simple. A healthy version of Hamburger Helper and above is what I came up with!

The pasta was left over, I seriously can't remember what this type of pasta is called, but it was wheat. And the sauce I used sun-dried tomatoes and basil with EVOO. It was a really tasty combination and something that I shall be cooking again!

The family loved it, even my father in law who doesn't like ANY greens on his plate. Plus there was enough left over for lunch tomorrow! 

Which is good because apparently my temp assignment might be lasting longer then the original 2 weeks. Of course this is awesome because my 24 Hour is literally 2 exits before work or 2 exits before I get on the freeway home. I can't miss it even if I wanted to!

Daily Stats Day 63:


Look at those stats. Second day back in the gym, after a LONG hiatus, and I make it in there two times in one day! Have to say that those stats look pretty good! This is a really good start to the Fall Season! 

Okay NeverEver's, sorry if I rambled today...I re-read what I wrote and fixed things up and I STILL feel like I am rambling, possible its a mood. Anyways, I am leaving you with this as it is time for my Evening Walk. I found it and it really hit me:

Day 52: Shopping for my Blog

Hey NeverEver's!

How has your Friday been?

It has been a wonderful day since the Hubby has the day off and I, well I still don't have a job so ya. The So. Cal weather is not going with the idea that it is Fall and therefore should be cooler but we haven't gotten the memo, there is a heat wave hitting us this weekend.

So I had no idea what I wanted to do for breakfast today. Since the Hubby was home I usually cook breakfast for us together but today I wasn't feeling it. After some great suggestions from my friends and after reading the posts from other blogs I got inspired. Have to say it came from Peanut Butter and Peppers, while looking through her amazing recipes I got my idea.

Cinnamon and Peach MultiGrain Pancakes
The whole kitchen really had really yummy Fall smell to it. The peaches went really well with the cinnamon. What made it better was it was Hubby approved!

After lazying around the house we went to get some stuff from Target. We are going to a movie marathon tomorrow for Indiana Jones, I personally can't wait, but I wanted to pick up some 'Healthy Snacks' so I wouldn't be stuck with popcorn and candies.

Got some almonds, Special K bars, and Low Fat Ruffles. All of which is better then popcorn when your in a theater for 4 movies in a row. Its a good thing Harrison Ford is so damn sexy!

Anyways, Hubby surprised me by looking at plates for my food on the blog. I was talking with him earlier that I didn't like the way my pictures were coming out. We are talking about getting a new camera one of these days, but for now  think these will help.


I never would have really picked these colors out but Hubby has some creative tastes and came out with this.


Again something I wouldn't have picked out but this is one of my favorite ones that we got.


I really have no idea how the picture came out sideways but it did. Anyways, I do love the Black vs White look so this one I might be using more often.


I love the contrast here, just like with the black and white. This one just pops a little more I think.

So that was my shopping for my Blog. I never would have thought I would actually be getting things for this but I am happy I have. Makes it even better that it was the Hubby's idea!

Daily Stats Day 51:


Yesterday was an amazing workout. Went to the park like normal but instead of just walking it I actually jogged in intervals around the park. Never have I done that before. It has been astounding me that I am jogging but able to keep it up!

Weekend Updates + Yay for Cooking

Hey NeverEver's!

I hope you have all had an awesome weekend! I have to say I am so proud of myself for cooking not only ONE but TWO meals this weekend!!

So for Saturday's meal I did a Stuffed Pork Chop (I put a LITTLE to much basil in the middle but other then that it was delicious) and it was Hubby approved!

Stuffed Pork Chops w/ Buitoni 3 Cheese Ravoli
I found the recipe here, and although it calls for 5 tablespoons of 'melted butter' I only used 1 1/2 to put in the mix that the chop was in and used Non Stick Cooking Spray for the rest. Oh and I didn't have any broth so I made do with water. It still turned out really yummy! I was shocked of course, but it was really yummy!

Friday Day 32:
It was ALL for that Islands Burger!
I was so happy, not only did I work out on Friday just to eat the Islands Burger and I didn't even eat the whole thing! I took half home! I usually don't take anything home. Yay for the little steps!

Saturday Day 33:
Still burned more then consumed
Saturday was a LAZY day! If it wasn't for the fact that we were hungry and there was NO food in the fridge I doubt we would have left the room! It was just one of those days! But we did get up and went go out to Fresh and Easy to get dinner for Sat and Sun!

Will be showing my successful Breakfast + Dinner for Sunday next post!
